  • Red chilli powder – 1 tsp

  • Turmeric powder – Β½ tsp

  • Hing (asafoetida) – ΒΌ tsp

  • Salt – to taste

  • Ghee or oil – 1 tbsp

🍳 Method

1️⃣ Prepare the Soya Granules

Boil soya granules in salted water for 3–4 minutes.
Drain and press thoroughly using a muslin cloth or strainer to remove all moisture.

2️⃣ Dry Roast the Granules

Heat a wide pan on medium-low heat.
Add squeezed granules and roast until dry and slightly crisp.

3️⃣ Toast the Seeds

Add flax seeds and sesame seeds to the pan.
Roast gently so the moisture evaporates without burning.

4️⃣ Add the Peanuts

Mix in roasted peanuts and stir well to combine.

5️⃣ Season the Mix

Lower the heat and add white pepper, red chilli powder, turmeric, hing, crushed kasuri methi, and salt.

6️⃣ Final Roasting

Continue roasting everything together for 2–3 minutes so the flavors blend.

7️⃣ Cool and Store

Remove from heat and allow the mixture to cool completely.
Store in an airtight jar to maintain crunch.

πŸ’‘ Tips

  • Remove every drop of moisture from boiled soya for best crunch

  • Roast on medium-low heat for even crisping

  • Bloom hing and turmeric briefly in hot ghee/oil for deeper flavor

  • Never store while warm β€” steam will make the snack soggy

  • Add chaat masala or amchur at the end for tangy variation
