Soya granules β 100 g
Flax seeds β 50 g
Sesame seeds β 40 g
Roasted peanuts β 120 g
Kasuri methi β 2 tsp (crushed)
White pepper β 1 tsp
Red chilli powder β 1 tsp
Turmeric powder β Β½ tsp
Hing (asafoetida) β ΒΌ tsp
Salt β to taste
Ghee or oil β 1 tbsp
Boil soya granules in salted water for 3β4 minutes.
Drain and press thoroughly using a muslin cloth or strainer to remove all moisture.
Heat a wide pan on medium-low heat.
Add squeezed granules and roast until dry and slightly crisp.
Add flax seeds and sesame seeds to the pan.
Roast gently so the moisture evaporates without burning.
Mix in roasted peanuts and stir well to combine.
Lower the heat and add white pepper, red chilli powder, turmeric, hing, crushed kasuri methi, and salt.
Continue roasting everything together for 2β3 minutes so the flavors blend.
Remove from heat and allow the mixture to cool completely.
Store in an airtight jar to maintain crunch.

Bloom hing and turmeric briefly in hot ghee/oil for deeper flavor
Never store while warm β steam will make the snack soggy
