Pumpkin Bhaji & Rajgira Roti

Diced red pumpkin 500 gms
Whole Red chillies – 2
Chopped ginger – 1 tbsp
Oil – 1 tbsp
Cumin seeds – 1 Tbsp
Roasted and crushed peanuts – ¼ cup
Coriander leaves – for garnish
Sendha namak – to taste
Curry leaves – 4-5

Rajgira paratha

-Rajgira atta – 1 cup
-Sendha namak – 1 tsp
ghee 2 tbsp

    1. In a hot pan, add oil, cumin seeds, chopped ginger, red chillies & curry leaves.
    2. Once the cumin seeds start crackling, add the diced pumpkin, season with salt & give it a nice mix. Cover with a lid & cook till the pumpkin softens.
    3. Once the pumpkin is cooked, add the peanuts & coriander. Give a mix.
    4. Serve hot with rajgira parathas.

For Paranthas

  1. In a bowl add the rajgira atta, sendha namak, water & knead to make a nice soft dough. Keep it aside for 10-15 min.
    Make paranthas preferably with ghee.
  2. Serve hot with pumpkin sabzi.
