Ragi Crackers with Fresh Ricotta & Apricot Dip

Ragi flour- 1cup
Salt- 1/2tsp
Onion powder- 1/2tsp
Cayenne powder- 1/2tsp
Garlic powder- 1/2tsp
Oil- 1tbsp
Curd- 2tbsp
Baking soda- 1/4tsp
Water- 2tbsp
Gluten free flour- 1tbsp
White sesame seeds- 1tbsp
Black sesame seeds -1tbsp

For the Ricotta
Full fat Milk- 2cups
Lemon- 1
Honey- 1tbsp
Crushed garlic – 1-2 cloves
Salt & Black pepper- to taste

For the stewed apricots
Dried Apricots – 1/2 cup
Sugar – 1tbsp
Cinnamon stick – 1 inch
Salt- a pinch
Water- 1cup (or as needed)

  1. First start with stewing the apricots
  2. In a saucepan, add dried Apricots, water, sugar and cinnamon stick and let it stew on low flame till it gets plump and soft. Add more water if needed
    (Keep stirring in between to avoid the apricots from sticking to the pan)
  3. Then make the crackers

  4. Preheat the oven at 180°©
  5. In a mixing bowl add Ragi flour, salt, onion powder, Cayenne powder, garlic powder, baking powder, oil and mix well.
  6. Then add curd and water and make a semi soft dough. Finally add some gluten-free flour to make the dough slightly pliable.
  7. Roll out small portions of the dough into 2mm thickness with a help of a rolling pin. Sprinkle a mix of sesame seeds and give a gentle roll so they get stuck to the rolled out dough. Using a knife cut out squares or whatever shape you like for your crackers.
  8. Transfer these crackers on to a baking tray and bake in a the preheated oven for 10-12 mins.
  9. Once done, take the tray out from the oven and allow the crackers to cool completely on a cooling rack
  10. Finally make the Fresh Ricotta:-

  11. Bring milk to a boil and add lemon juice. Once the milk curdles, allow it to simmer for 7-10 mins on gentle heat.
  12. Strain through a Muslin cloth and keep aside. (Don’t dry it out too much. Basically it should resemble Chena and not a block of paneer)
  13. Once done add to a mixer grinder along with garlic, salt, pepper, lemon juice, and some honey. Blend it to a smooth consistency.
  14. Transfer to a bowl and mix in the stewed apricots (after taking out the seed)
  15. Serve the crispy Ragi Crackers with fresh ricotta cheese dip, topped with some more stewed apricots.
