Boiled Brown rice – 1 cup
Grated regular/sweet potatoes – 1 medium
Grated yellow/green zucchini – 1/2 cup
Salt & Black pepper powder – To Taste
Oil as required

  1. In a mixing bowl add the rice & use a potato masher to mash it a little.
  2. Then add the grated potatoes, zucchini, salt, pepper & mix well.
  3. Take a small portion, shape them into rice cakes.
  4. Drizzle some oil in a pan & cook them out till they turn golden brown.
  5. Serve hot with the sauce of your choice.
