Spaghetti With Leeks

Leeks-1 large, halved & thinly sliced (white and light green parts only) Add them to a bowl of cold water to clean them thoroughly, then strain & keep aside.
Spaghetti-1/2 packet
Oil-1 tbsp
Butter- 1 Tbsp
Minced Garlic-3-4 cloves
Chilli flakes-1 tsp
Salt & pepper to taste
Fresh cream- 1/4th cup
Freshly chopped parsley- 2 Tbsp

  1. In a deep pot, add water along with splash of oil, lots of salt & bring it to a boil. Now add the spaghetti & let it cook till it’s tender just to the bite.
  2. Once done strain & add a dash of oil so that the spaghetti does not stick. Save the pasta water.
  3. Now, to a hot pan, add oil & butter. Once the butter stops foaming, add minced garlic & chilli flakes. Sauté for a few seconds & add the sliced & washed leeks.
  4. The leeks should soften within 6-7 minutes. Then add the boiled spaghetti along with some of the pasta water. Season with salt & pepper, mix well. Finally stir in the fresh cream and take it out in a serving bowl or plate. Garnish with freshly chopped parsley & serve immediately.
