Strawberry Ice Cream

Strawberries-400 gms
Condensed milk-200 gms
Milk powder-3/4 cup
Fresh cream-100 gms

For the compote

Strawberries-225 gms
Sugar-1-2 tbsp (or as per tartness of the strawberries)

  1. For the compote, roughly chop the strawberries & let them cook in a pan till they soften. Then add the sugar & let it cook further.
  2. Cook till you get the right consistency ; juicy with a few chunks of strawberry still there.
  3. Take it off the flame & let it cool completely.
  4. For the ice cream, in a mixer grinder add strawberries & blend.
  5. Then add the rest of the ingredients and blend till smooth. Take it out in a steel or glass container, close the lid and freeze overnight.
  6. Before serving, take it out about 15 mins prior and with the help of a scoop dipped in hot water, scoop the ice cream out and serve immediately topped with the prepared & chilled strawberry compote.
