Ingredients:
Watermelon rind (diced)- 2.5 cups
Oil- 1 tbsp
Cumin seeds – 1 tsp
Asafoetida (hing) – a pinch
Garlic (chopped)- 3
Onion (chopped) – 1 (medium)
Green chillies (chopped)- 3
Tomato (chopped)- 1 (medium)
Salt – to taste
Turmeric powder – ½ tsp
Red chilli powder – 1 tbsp
Coriander powder – 2 tsp
Water – 2 cups
Dry mango powder (amchoor)- ½ tsp
Jaggery powder – 1 tsp
For Watermelon Salad
Ingredients :
Watermelon (diced) – 2 cup
Cucumber (roundels) – ½ cup
Onions (sliced) – 1 small
Fresh mint leaves – 1 tbsp (chopped)
Fresh coriander leaves – 1 tbsp ( chopped)
Green chillies (chopped)- ½ tsp
Salt & pepper powder – to taste
Lemon juice – half a lemon
Method:-
1. Heat oil in a kadhai over a medium flame. Add cumin seeds & let them splutter.
2. Now, add hing followed by garlic & sauté till golden brown.
3. Add chopped onions along with green chillies & sauté until onions turn translucent.
4. Add chopped tomatoes & cook till they are soft.
5. Now, season with salt along with turmeric powder, red chili powder & coriander powder. Mix well & cook for a couple of minutes.
6. Add diced watermelon rind to the pan & roast them on a high flame for 2-3 mins.
7. Now, add hot water & mix well. Cover the pan & let it simmer on medium flame till the watermelon rind gets tender.
8. Once done, turn off the flame and keep it covered.
9. Transfer to a serving bowl & then serve it with peele chawal.
For Salad
Method:-
1. In a large mixing bowl, add watermelon along with all ingredients and toss them to combine well.
