Thai Rice Balls

Oil – 1 tbsp
Minced Garlic – 1 tsp
Thai green curry paste – 1 tbsp
Finely diced Bell peppers – ¼ cup
Finely chopped Broccoli florets- ¼ cup
Finely chopped Mushrooms – ¼ cup
Crushed Peanuts -1 tbsp
Freshly Grated coconut – 1 tbsp
Salt & pepper to taste
Cooked Rice – 1 & ½ cup
Rice flour – 2 tbsp
Oil for deep frying
Sweet chilli sauce for serving

  1. In a separate pan add some oil, garlic & sauté for a few seconds. Now add the thai curry paste & cook till fragrant.
  2. Then add all the veggies, crushed peanuts & freshly grated coconut. Season with salt & pepper. Mash nicely & remove the mixture to a bowl.
  3. In the same bowl add rice & mix well with the veggies. Add rice flour for binding.
  4. Now grease your hand with a little water & make small balls with the mixture.
  5. Deep fry the balls in hot oil on medium flame till golden brown on all sides.
  6. Serve immediately with sweet chilli sauce.

Recipe Notes:

  1. Chop all the vegetables finely & mash them well, so that it is easier to shape the balls.
  2. You may use red or green thai curry paste for this recipe.
  3. Skip peanuts if your child is allergic to nuts.
