Thecha Paneer Skewers with Homemade Paneer

Recipe: 01 Homemade Paneer

Ingredients:

Full cream milk – 2 litres
Fresh curd along with its water– ½ cup
Lime juice – 1 lime

Recipe: 02  Green Chilli Garlic Thecha Paneer

Ingredients:

Green chillies – 4 to 5
Garlic cloves – 4-5
Peanuts – ¼ cup
Cumin seeds – ½ tsp
Coriander leaves – a handful
Lime juice – 1 tsp
Salt – to taste
Fresh Homemade Paneer – 100 g (cubed)

Recipe: 03 Malwani Thecha Paneer

Ingredients:

Dry red chillies – 4 to 5 (soaked in warm water)
Garlic cloves – 4-5
Whole coriander seeds – 1 tbsp
Niger seeds (karal) – 1 tsp
Fresh grated coconut – ¼ cup
Curd – ¼ cup
Salt – to taste
Fresh Homemade Paneer – 100 g (cubed)

 

Method for Homemade Paneer: 

1. Heat milk in a heavy-bottomed pan and bring it to a rigorous boil.
2. Now turn the flame to the lowest intensity and gently stir in the curd first; the milk will begin to curdle lightly.
3. Then add lime juice which will make the whey separate almost immediately. Turn the flame off.
4. Pour the curdled milk onto a muslin cloth lined strainer.
5. Add ice cubes to cool down the paneer so it doesn’t get hard with the residual heat.
6. ⁠Also rinse with cold water to remove the lemon taste.
6. Tie the cloth, squeeze out excess water gently, leaving some moisture intact.
7. ⁠Place along with the cloth in a steel box with holes ideally or gently press the paneer with a heavy object to allow the water to seep out very gently and till the paneer sets into a nice even block (takes about 2 hrs. You can even do this a day prior.)

Method for Green Chilli Garlic Thecha Paneer: 

1. To make the green techa, first roast the green chillies, garlic, and peanuts until slightly charred.
2. Pound coarsely in a mortar-pestle.
3. Then add the coriander(helps to chop slightly before pounding) and salt. Mix well.
4. ⁠Always add lime juice right in the end to brighten up the colour.
5. ⁠Now coat the paneer cubes with this thecha. Grill on a hot pan till nice and golden on each side. Serve immediately or with another variety of Red Thecha Paneer. (In that case first make both the techas and the coat and finally grill together)

Method for Malwani Thecha Paneer:

1. Dry roast garlic, coconut, niger seeds, and coriander seeds until aromatic.
2. Blend all of the above with soaked red chillies, curd and salt into to a slightly coarse paste.
3. ⁠Toss the paneer cubes with this thecha.
4. ⁠Grill on high flame till golden all sides.

Sautéed Veggies
Toss some diced capsicum and onion pieces on high flame with a little oil a dash of salt. Keep aside.

Salad For the Base of the platter
Toss some shredded Cabbage and thinly sliced Onions with
lime juice, salt and a dash of Chaat masala.

Assembly

1. Spread the prepared salad on a serving plate.
2. ⁠Add the green thecha paneer with diced capsicum and onion pieces between the paneer pieces for colour and crunch.
3. ⁠Do the same with Red Thecha Paneer as well.
4. ⁠Serve immediately and enjoy the appreciation of your family and guest alike 😍
