Varai Idli

Varai (Sama ke chawal)/ barnyard millet – 1 cup
Sabudana/ tapioca pearls – 1/4 cup
Curd – ½ cup
Sendha namak/ Rock Salt – to taste
Baking soda – 1tsp

Chutney

Grated coconut ½ cup
Roasted peanuts 2 tbsp
Coriander leaves 1/2 cup
Sugar 1 tsp
Sendha namak to taste
Lemon juice – 1 tsp
Green chillies – 2

    1. Rince & soak the sabudana & varai in water for 2-3 hrs.In a blender add the soaked sabudana, varai, curd, salt & grind coarsely. (Remove any excess water before grinding)
    2. Take the mixture out into a bowl & keep it aside at least for 10-15 mins.
    3. Just before preparing the idlis, add a little baking soda to the batter & give it a good mix.
    4. Heat water in a steamer & grease the idli molds with some oil.
    5. Pour the batter in the moles and steam the idlis for 8-10 mins or until they are cooked completely.
    6. Once done, allow it to cool slightly & then demold it.

For the chutney

  1. In a mixer grinder, add the grated coconut, peanuts, coriander leaves, lemon juice, sugar, green chillies, sendha namak & grind till you get a smooth consistency chutney.
  2. Serve as a side for the idlis.
