Veggie Cutlet/ Railway Cutlet

Grated ginger-1 tsp
Minced garlic-1 tsp
Green chillies chopped- 1
Finely chopped onion-1
Jeera pd-1 tsp
Chaat Masala-1 tsp
Turmeric pd-½ tsp
Lemon juice-½ tsp
Beetroot grated-1
Medium carrot grated-1
Boiled Peas-¼ cup
Finely diced beans-¼ cup
Boiled and mashed potato-1-2
Salt and pepper to taste
Chopped coriander leaves-1 tbsp
Cornflour/maida slurry-¼ cup
Bread crumbs for coating-½ cup
Oil – ¼ cup

  1. In a pan heat some oil, add the chopped onions & sauté till translucent.
  2. Add the garlic, ginger & green chilies.
  3. Now add grated carrots, beetroot, beans & peas. Season with salt, pepper, chaat masala, turmeric pd, jeera pd & squeeze in a dash of lemon juice. Finally add chopped coriander leaves & boiled & mashed potato. Mix well.
  4. Heat oil in a pan for shallow frying.
  5. Make a smooth slurry of cornflour or all purpose flour.
  6. Spread bread crumbs on a plate.
  7. Now take portion of the cutlet mixture & make heart shapes.
  8. Dip this in cornflour slurry followed by a coat of the bread crumbs.
  9. Shallow Fry on both sides till golden & crunchy. Remove on a paper towel. Let them cool slightly and pack them in the tiffin.
