Zoodles with Olives & Prawns

-Yellow zucchini (spiralized) – 1/2
-Green zucchini (spiralized) – 1/2
-Olive oil – 2 tbsp
-Garlic (Chopped) – 2 tbsp
-Almonds (sliced) – 2 tbsp
-Chilli flakes – 1 tsp
-Medium-sized prawns – 6-8 pieces
-Salt & Pepper to taste
-Lemon juice – 1 tsp
-Green OLIVES FROM SPAIN – 4-5

For garnish

Parsley (Chopped) – 1 tsp
-Pitted Black OLIVES FROM SPAIN (Whole) – 3-4

  1. In a hot pan, add the olive oil. Once it’s heated, add the chopped garlic, sauté them to get a nice golden colour & follow it up with sliced almonds & chilli flakes.
  2. On high flame, add the prawns, cook for 2-3 mins on each side. (Making sure not to overcook the prawns)
  3. Season with salt and pepper & add a dash of lemon juice.
  4. Now add the thumbed green olives, followed by the zoodles & give everything a good toss.
  5. Serve hot garnished with chopped parsley and some black olives.
