Zucchini & Cheese Parcels

Green zucchini- 1
Boiled Corn (coarsely ground) 100 gm
Mozzarella cheese- 1/4cup
Chopped garlic- 1tsp
Oil-For frying
Mixed herbs-1/2 tsp
Chilli flakes-1/2tsp
Crushed black pepper-1/2tsp
Salt to taste
Breadcrumbs-1/2cup
Refined flour-2tbsp

  1. In a pan add 1 tbsp oil, chopped garlic and chilli flakes followed by the crushed corn. Now season with salt, pepper, add the mixed herbs & give it a good toss.
  2. Take it off the flame and allow it to cool.
  3. Add the Mozzarella to it
  4. Now slice the zucchini really thin over a mandoline.
  5. Heat oil for frying.
  6. Make a slurry with flour & water.
  7. Take one zucchini slice & place another slice across and on top of it (like a +sign), add filling in the center & close the four sides.
  8. Make all the Parcels like this.
  9. Now dip each parcel in the slurry & coat them with breadcrumbs. Deep fry on medium flame till golden brown.
  10. Serve hot with a dip of your choice.
