Soya granules – 1/2 cup ( washed and soaked)
Chopped onion – 1/4 cup
Grated beetroot- 1/4 cup
Ginger – garlic paste -1 tsp
Salt – to taste
Mixed herbs- ½tsp
Chilli flakes- ½tsp
Jeera powder- a pinch
Boiled potato – 1 medium (mashed)
Oil- 2tsp
For The Assembly:-
Small size pav- 2
Mint chutney – 1tsp
Veg mayonnaise – 1tbsp
Sliced onion- 3-4
Sliced tomatoes – 3-4
Butter – as needed
- In a non-stick pan, heat oil, sauté onion till translucent. Then add the ginger- garlic paste, sauté till the raw smell goes away. Now add grated beetroot and cook till its moisture evaporates.
- Now add the soaked soya granules along with all the seasonings.
- Cook the mixture till all the masalas get nicely incorporated into the soya granules. Once done transfer to a mixing bowl.
Add mashed potato to the bowl and mix well to bind the granules.
- Now take small portions of the mixture and flatten them like cutlets.
- Heat oil in the non-stick pan and place all the soya cutlets on it, searing them from both sides till they get golden brown and crunchy from the outside . Remove on a tissue paper and keep aside
- Make a spread by mixing mint chutney in mayonnaise. Whisk well to make Mint Mayo!
- Now to assemble the burger, Toast the mini pavs on a pan with some butter.
- Take it out of the pan, then apply the mint Mayo on one side.
- Now a place a slice of tomato on the spread.
- Then place the soya cutlet and finally a slice of onion.
Finally close it with the top of the pav.
- Pack atleast two of these in the tiffin and more if he has friends that look into your child’s tiffin box!
